what you need
1/3 cup coconut flour
1/3 cup almond flour
4 eggs
½ cup kefir yoghurt
2 tbsp vanilla protein powder (we used Amazonia Raw paleo protein – vanilla & lucuma)
1 tbsp maca powder
1 tbsp coconut oil
1 tsp vanilla extract
2 tsp rice malt syrup or other sweetener of your choice
½ tsp cinnamon
decent pinch sea salt
what to do
In a large mixing bowl, combine all ingredients. Mix thoroughly until combined into a smooth batter.
Heat a large lightly greased non-stick fry pan to medium high heat.
Spoon the pancake batter onto the fry pan. When the batter starts bubble (approximately 1-2 mins) turn the pancake over and cook for another minute or until browned. If the pancakes are starting to burn or are taking too long to cook, you may need to adjust the cooking heat.
Once each pancake is done, place them in an ovenproof dish in the oven at approx. 80°C to keep them warm while making the other pancakes.
Once all the batter is used, remove the pancakes from the oven ready to serve.
Serve topped with fruit salad, yoghurt kefir, a drizzle of raw honey and a sprinkle of hemp seeds.
