Commonly referred to as green cardamom because the pods are bright green in colour. Has a sweet eucalyptus like aroma that adds ‘fresh’ notes to spice mixes. The pods, seeds and ground seeds are used in curries and sweet spice mixes. Compliments vegetable and meat dishes. Brown cardamom has a distinct ‘musty-smoky’ flavour and green and brown cardamom are not interchangeable in recipes.

Use
Used mainly in curries and rice dishes by adding a few whole pods during cooking. For fragrant coffee, put a couple of pods in the plunger with the coffee grounds. Delicious with stewed fruit.
