Ingredients: Vegetable Korma Curry Traders Kit, 1 cauliflower, 200 grams green beans, 2 carrots, 200 grams peas, 3 onions 2 green chillies, ½ bunch coriander – leaves & stems, 6 cloves garlic, tbspn ginger, ½ cup of water, 410ml chopped tinned, tomatoes, ½ tbspn vegetable oil, 1 ½ cups vegetable stock, 410ml coconut milk, pinch salt
How to Make Vegetable Korma Curry: Roast Bag 2 in a dry fry pan until aromatic. Pour into mortar & pestle and grind to a powder. Place onions, chillies, coriander, garlic, ginger, water and Bag 1, Bag 3 and Bag 4 in food processor or blender. Whizz it into a paste. In a heavy saucepan heat vegetable oil and stir in paste. Cook for 5 minutes then stir in powder. Add tinned tomatoes, vegetable stock and bring to the boil. Add vegetables and coconut milk, bring back to the boil, reduce heat and serve when vegetables are cooked to your liking. Stir in salt to taste.
