What is Freekeh? It's young, green wheat that's gently roasted and rubbed to remove the tough outer husk, leaving behind a part-roasted kernel. This unique process allows the raw wheat's naturally occurring nutrients to be retained. It's high in dietary fibre and digested slowly by the body. Freekeh has a magical smokiness with a firm chewy texture, making a flavourful alternative to other grains.

Use as an alternative to other grains.
To cook: Put 2 1/2 cups of water or stock into a pot with 1 cup of freekeh. Cover & bring to boil. Reduce heat and simmer for 15-20 mins. it is done when all liquid is absorbed and the grains are soft.
