what you need
- 1 ½ cups shredded coconut
- 1 ½ cups desiccated coconut
- 1 cup coconut cream
- ¼ cup coconut oil
- 3 Tbs maple syrup or honey (can use stevia if desired)
- 100g minimum 70% dark chocolate (to coat bars)
what to do
- Combine all ingredients (except the dark chocolate) in a bowl and mix well.
- Roll into bar shapes and place on a tray lined with baking paper. Refrigerate until ready to roll in chocolate.
- Melt chocolate in bowl over medium heat using a small saucepan of water. Continue to stir until chocolate is fully melted. Remove from heat.
- Dip each of the coconut rolls into the dark chocolate to completely coat and place back on the tray. Sprinkle with extra desiccated coconut and return to the fridge for a few hours to set.
