what you need (makes 8-10 bars)
- 1 cup finely chopped nuts (almonds, cashews, or macadamias, chopped)
- ½ cup dried cranberries (preferably unsweetened)
- ¼ cup cacao powder (for rich chocolate flavour)
- ½ cup collagen powder (bovine or marine)
- ¼ cup protein powder (vanilla or chocolate flavoured)
- ¼ cup coconut oil, melted
- ¼ cup honey (or maple syrup)
- 1 tsp vanilla extract
- ¼ tsp sea salt
- ¼ cup dark chocolate (85% or higher), melted (for drizzle, optional)
what to do
- Prepare the dry ingredients: In a bowl, mix the chopped nuts, dried cranberries, cacao powder, collagen powder, protein powder and sea salt.
- Combine wet ingredients: In a separate bowl, whisk together melted coconut oil, honey, and vanilla extract.
- Mix wet and dry ingredients together so well combined. The mixture should be sticky but firm. If too dry, add a little more coconut oil.
- Press mixture into a small baking dish lined with parchment paper and press the mixture firmly into an even layer.
- Chill & Slice: Refrigerate for 1-2 hours until set, then slice into bars.
Optional: Chocolate Drizzle
Melt dark chocolate and drizzle over the bars for extra richness. Keep in the fridge for up to a week or freeze for longer storage.
