what you need
1 cup buckwheat flour (or about 3/4 cup buckwheat groats ground into flour)
1/2 cup coconut sugar
1/2 cup coconut oil, melted
1/2 cup cashew butter (you can also use peanut butter!)
1 tsp vanilla paste
1 tsp baking powder
pinch salt
80g dark chocolate, roughly chopped
what to do
If using buckwheat groats, add these to high speed food processor and process into a fine meal.
In a large bowl, with a handheld blender process the sugar and coconut oil until well combined. Add the nut butter and continue until evenly combined.
Add to the wet mixture, buckwheat flour, baking powder, salt until evenly combined. Fold through the dark chocolate.
Place into the fridge for 30 mins to chill.
In the meantime, preheat the oven to 180°C.
Place a heaped teaspoon of cookie dough onto a prepared baking tray. Slightly flatten each cookie dough ball will back of spoon or fingers.
Bake for 12 – 15 minutes until golden brown. Remove from oven and allow to cool on the baking tray. Remove to wire rack to fully cool.
