This mix of goodies tastes great sprinkled on your breakfast bowl, is a perfect healthy party snack and will help keep you going on your next outdoor hike…..

what you need

1 cup cashews
2 cups raw almonds
1 cup raw macadamia nuts
1 cup pecans
1/2 cup pumpkin seeds + 1/4 cup extra
1/2 cup organic shredded coconut
1/4 cup extra virgin cold pressed coconut oil
1/3 cup organic maple syrup (or raw honey – for a little extra sweetness)
1 tsp organic vanilla extract
2 tsp cinnamon
1/3 cup dried cranberries
1/2 cup dried mulberries
1/3 cup goji berries

what you need

Pre-heat oven to 180°C.

Mix all ingredients, except for the dried berries and 1/4 cup of pumpkin seeds, in a large bowl. Mix well so the ingredients are coated with the maple syrup.

Line a large baking tray with baking paper. Spread out mixture on the tray. Heat in oven for 15-20 min until nicely browned. Watch carefully after 15 mins to make sure that it doesn’t start to burn.

Meanwhile, mix the dried cranberries, mulberries, goji berries and the 1/4 cup pumpkin seeds together in a small bowl.

Once the mix is cooked, remove from the oven and fold through the dried berry & seed mix. Leave to cool completely.

Should be stored in a dry, airtight container. Keeping this mix in the fridge will keep it extra crunchy!!!
